This article examines the food practices of the rural population of Karakalpakstan between 1960 and 1970. It analyzes the interaction of traditional foundations and innovations introduced during the Soviet era, including changes in product availability, the introduction of new agricultural crops and technologies, as well as the impact of urbanization and interethnic exchange. Special attention is paid to the role of collective farm production, household plots, and market mechanisms in providing the population with food products. Changes in the diet structure resulting from the region’s geographical features and the introduction of new types of vegetable crops, such as potatoes, tomatoes, and eggplants, are identified.
