The composition of the oil of the amaranth variety “Markhamat” was analyzed in the laboratories of the Republic of Korea “KITECH” and “KIRLM”. The results showed that this variety of amaranth has a number of advantages over other varieties in terms of oil composition. The climatic conditions of the Markhamat region turned out to be the most suitable for this variety, as a result, the maximum content of squalene was obtained.
