This article presents the optimal conditions for extracting oil from milk thistle seeds (Silybum marianum L.) cultivated under local conditions using the cold pressing method. The chemical composition of the extracted oil was analyzed using the GC-MS device, and the research results are provided. Milk thistle seeds are characterized by their unique bitter taste and are distinguished by being rich in various beneficial compounds.
