ANALYSIS OF PHENOLIC COMPOUNDS IN THE SEEDS OF BUNIUM PERSICUM AND CARUM CARVI

Three studies were conducted to assess the phenolic profile and flavonoid content of the seeds of Bunium persicum (black cumin) and Carum carvi (yellow cumin), two aromatic and medicinal plants belonging to the Apiaceae family. These species are often confused due to their similar structure and morphological characteristics, which leads to food, pharmaceutical and scientific research. High-performance liquid chromatography (HPLC) was used to determine the content of major phenolic compounds such as gallic acid, salicylic acid, rutin, quercetin, apigenin and kaempferol in the seeds of the two species. According to the results, while rutin and quercetin were higher in yellow cumin seeds, apigenin, salicylic acid and gallic acid were dominant in black cumin seeds. The three species play an important role in the antioxidant, antimicrobial, anti-inflammatory and potentially therapeutic transport properties of both species. Industrial sources provide a scientific basis for the identification of industrial parts of plants and their application in the food and pharmaceutical industries.
