This article identifies and analyzes the content of water-soluble vitamins in the fruits of Maclura pomifera growing in Uzbekistan using HPLC. Additionally, a comparison was made with the amounts found in Maclura pomifera fruit growing in Turkey. Furthermore, the influence of water-soluble vitamins on human health was analyzed and studied based on scientific sources. Water-soluble vitamins are considered essential for metabolism in the body, the immune system, eye and skin health, and the bone and circulatory systems. B vitamins are of great importance among water-soluble vitamins for performing vital functions in the body. Water-soluble vitamins must regularly enter the body with food, as their excess does not accumulate in the body. Their deficiency can lead to various health problems. The level of study of the obtained plant was assessed, and it was concluded that research is currently insufficient.
