This article presents the titrimetric indicators of the pectin substance obtained from the Uzbekistan, Andijan, Marhamat, and Ulug'nor varieties of local amaranth grown in the Tashkent and Andijan regions of our country, as well as the results of the IR spectrum. The introductory section includes a presidential decree related to this plant, as well as brief information about the plant.
