The antioxidant content of melon Peel has the property of acting on free radicals (O2, HO, HO2) and unsaturated fatty acids with free radicals (RO, RO2). It has been found that the optical density of the melon peel decreases over time when its antioxidant activity is checked in dfpg relatively in vitro conditions. Compared to ascorbic acid obtained as a control (251±14.0), melon pod (398±19.0) was found to have a high antioxidant content.
