The purpose of the research is to determine the proteins in the fruit peel and seeds of the Tuyatish and Qayin varieties of pomegranate and to study their percentages. The percentage of protein was determined in HPLC (High Performance Liquid Chromatography). The results of a comparison of the percentage of proteins in the peel and seeds of the Qayin pomegranate fruit with the proteins in the peel and seeds of the Tuyatish variety are presented. Protein percentage in the peel and seeds of the Tuyatish variety is higher than the protein percentage in the peel and seeds of the Qayin pomegranate.
