THE ROLE OF SUGAR SUBSTITUTES IN THE HUMAN BODY IN THE FOOD INDUSTRY

Introduction. As we all know, in recent years Uzbekistan has made significant efforts to develop the medical sector and to design and implement concrete measures aimed at aligning the healthcare system with international standards. When sugar or sugar substitutes and sweetening agents are consumed chronically within the permitted daily doses, they can cause changes in lipid metabolism - an increase in cholesterol and triglycerides, as well as alterations in the levels of lipoproteins of various densities [3]. Taking into account the negative effects of excessive sugar intake on the human body, the recommended daily sugar consumption has been set at 25–30 grams. Purpose of the work. To reduce the number of harmful substances that have a negative impact on humans by assessing the effects of sweeteners and sugar substitutes, widely used in the food industry, on carbohydrate metabolism and meeting the population's sugar needs. Besides people with diabetes, to involve other segments of the population in these activities as well. Materials and methods. Sugar substitutes – fructose and stevia. Biochemical and statistical methods were used in the study. Results. Based on the data obtained during the study, it was found that continuous and prolonged exposure to fructose in the human body leads to a sharp increase in blood sugar levels. By the 30th day of the experiment, blood sugar levels had risen by 59.8% compared to the baseline, and by the 60th day, they had increased by 74.8%. Conclusion. Based on the obtained data, it can be concluded that continuous and prolonged exposure to fructose and stevia in the body may lead to the development of conditions such as hyperglycemia and hyperinsulinemia.
