The paper presents preliminary technological results of drying tart cherry fruits of ‘Shpanka chyornaya’ and ‘Lyubskaya’ varieties under the conditions of the Tashkent region using various drying methods. According to the research results, the infrared drying method demonstrated the highest efficiency in terms of product yield (up to 24.1%), dry matter content (up to 84.5%), and organoleptic quality (4.8 points). The obtained data serve as a scientific basis for determining optimal modes for the industrial processing of cherry fruits.
