Tomato is one of the most widely cultivated vegetable crops in the world and is characterized by high biological value. Currently, the processing of tomato products and the production of functional food products are considered among the most important issues in the food industry. This article investigates and compares the physical and chemical characteristics of the widely cultivated tomato varieties Madera, Lojayin, and Rio Grande grown in the Republic. The physical parameters included the average weight of a single fruit and the diameter of the maximum transverse section of the fruit, while the chemical parameters included the content of soluble dry matter, pH value, and total titratable acidity determined by the titration method. The study of physical parameters revealed that the Rio Grande tomato variety had larger fruit size compared to the other studied varieties. In addition, the content of soluble dry matter in the Rio Grande variety was found to be 0.8–1.0% higher than in the other varieties.
