The article presents the chemical composition of quince fruits, their importance for human health, determination of the amount of moisture in the fruits, preparation of aqueous and alcoholic extracts of the fruits, as well as the amount of vitamins and flavonoids in these extracts were analyzed by HPLC it was reported that the amount of vitamin C is higher than others vitamins, and the amount of rutin and gallic acid is higher than other flavonoids.
