This article analyzes, based on scientific literature, the significance of rhubarb (Rheum palmatum L.) as a vegetable crop, its nutritional value, and its beneficial effects on human health. It has been established that biologically active compounds present in rhubarb, including flavonoids, phenolic compounds, and anthraquinones, exhibit antioxidant and anti-inflammatory properties and contribute to the regulation of metabolic processes in the body. The results of the study indicate the potential of incorporating rhubarb into a healthy diet, as well as its wide application in the food and pharmaceutical industries.
