This research work is devoted to the assessment of physiological and biochemical changes and their organoleptic indicators during the storage of fruits of apple varieties grown in intensive orchard conditions. According to test results, the Fuji, Goldrush, and Mutsu varieties were characterized by high juiciness, firm flesh, and attractive appearance. They demonstrated good organoleptic properties over a shelf life of 172–195 days.
