Official statistics were used to assess processed meat production trends in Uzbekistan. Changes in semi-smoked and smoked sausage output were compared, and quality indicators were considered against standard requirements. Scientific sources were reviewed to evaluate the prospects of bioactive components and microencapsulation for developing functional meat products.
