This article presents a systematic analysis of the chemical composition, bioactive compounds, and biological efficacy of paste prepared from the fruits of Elaeagnus angustifolia L. Based on a review of the scientific literature, the antioxidant, gastroprotective, and immunomodulatory mechanisms of flavonoids, phenolic compounds, polysaccharides, and mineral complexes contained in the fruits were scientifically substantiated. In addition, the technological conditions for the preparation of jujube (Russian olive) paste and its potential application as a food product for both children and adults were summarized. The results indicate that the paste may be used as an adjunct product in the management of gastrointestinal disorders and anemia. The scientific novelty of the study lies in the comprehensive analysis of the composition and biological efficacy of paste prepared from the fruits of Elaeagnus angustifolia L.
