The article presents a study of the composition, properties and varieties of lecithin, as well as of the various methods of obtaining it in the food industry. An analysis of modern technologies for the production of lecithins from various types of plant raw materials has been carried out. A comparative assessment of their technological properties has been made and the fields of application have been considered. As a result, it can be said that the source from which lecithin is obtained has an enormous influence on its properties.
