Currently, modern instrumental methods of elemental analysis are being used, along with the introduction of portable X-ray spectrometers into archaeological research. The most important indicator for the study of agriculture, of course, is the saturation of the layer with the remains of cultivated plants. Of particular interest is the distribution of samples across different quantitative classes, which characterize the concentration of plant residues. One of the best instruments for the archaeological analysis of various materials, objects and substances is the spectral analysis of artifacts. The analysis of plant seeds found at the Gyaur-Kala (Khojeli) site revealed that the largest percentage of the chemical composition consists of Cu (24.4%), Si (22.7%), and Ca (24.4%). According to the spectrogram, the highest peak in the density of elements is observed for Ag (from 20 to 40 and higher). It is hypothesized that silver ions may protect plants from fungal, viral, and microbial diseases. The analysis of plants from two different localities to determine the content of heavy metals shows that, despite the region’s aridity, elements such as Ca, Cl, and P are present in all cases. Thus, the studied archaeobotanical materials suggest that, during the Middle Ages, changes occurred both in the structure of the harvest and in grain consumption in the cities and towns of medieval Khorezm.
