Physicochemical parameters of pectin isolated from the root of Jerusalem artichoke "Fayz Baraka" grown in the farm "Ulugbeklar", Torakorgan district of Namangan region: the content of macro- and microelements, galacturonic acid, free carboxyl groups, esterified carboxyl groups and determined the average molecular weight. It is shown that pectin substances isolated from Jerusalem artichoke belong to highly esterified medium-molecular pectin substances.
