The article describes the chemical composition of persimmon fruits, their importance for human health, the preparation of aqueous and alcoholic extracts of the fruit, and also analyzed the amount of water-soluble vitamins, flavonoids in the aqueous and alcoholic extracts of the fruit using the HPLC method, it was reported that the amount of vitamins increases in the order B6 < B3 < B1, the amount of gallic acid, rutin and salicylic acid is higher than other flavonoids.
