The article provides information on the importance of antioxidants in the human body by evaluating the antioxidant properties of a number of natural and synthetic antioxidants widely used in the food and chemical industries: garlic and its peel powder is compared to standard antioxidant ascorbic acid. Based on its antioxidant properties garlic and its peel powder is recommended for use in the food industry as a natural antioxidant.
