This article presents a systematic analysis of modern research aimed at the advancement of automation and digitalization technologies in the dairy industry, with particular emphasis on the processes of product sorting and quality control. The main directions of digital solution implementation are examined, including the use of robotic sorting lines, computer vision systems, spectral analysis sensors, and artificial intelligence tools for the automatic verification of product compliance with established standards. A comparative analysis of existing approaches to the implementation of intelligent control systems within the technological cycle — from raw material intake to packaging and finished product logistics — is conducted. It is noted that modern digital monitoring methods not only optimize the sorting process but also ensure full traceability of each product batch. The identified trends demonstrate a transition of enterprises toward the concept of “smart factories,” where the integration of industrial sensors, cloud-based platforms, and machine learning algorithms plays a key role. The results of the analysis confirm that the application of digital technologies in sorting and quality control processes contributes to reducing production losses, stabilizing safety indicators, and forming competitive advantages for enterprises in the dairy sector.
