The work reflects the current state of the technology for obtaining refined vegetable oils and identifies trends in their improvement and further development in the environment of industrial automation using modern methods of distributed monitoring, building control, and management systems for technological processes of refining vegetable oils. The influence of technological modes of refining vegetable oils on the efficiency of diffusion extraction of free fatty acids (FFA) has been studied and the indirect pH-metric measurement of FFA concentration has been substantiated.
