The article covers the issues of developing modern drying technologies and creating a new design in order to meet the population's demand for dried fruit products throughout the year, and of increasing the effectiveness of research by comparing, on the basis of an experimental and theoretical system, the products dried in it with high quality, in particular apple slices, apricots, plums and figs.
