The purpose of the study is a comparative study of fatty acid compositions and physicochemical properties of fatty acids ofvarious fats and oils. The study of mainly qualitative and quantitative compositions of fatty acids in order to synthesize nonionicsurfactants based on them. The conditions for the complete hydrolysis of fats and oils have been studied. The main influencingfactors, temperature, solution environment, pH value, concentration, solution exposure time, reagents, etc. are indicated. and theiroptimal values for the hydrolysis process.
