This article studied the effect of various nitrogen fertilizers on the grain quality of soft winter wheat, in particular on the content of gluten and protein. The research was conducted on the basis of field experiments, and the use of ammonium nitrate, urea and ammonium sulfate in various combinations was evaluated. According to the results obtained, the type and rate of nitrogen fertilizers had a significant effect on the content of gluten and protein in the grain. The highest gluten and protein content was recorded in the variant where a combination of ammonium nitrate and urea was used at the rate of N240.
