The quality of products is assessed by several indicators. We use such methods as measurement methods, statistical method, calculation method, sociological method, expert method. There is another method of evaluating the quality of products, which is directly used by every consumer. This is a method of organoleptic evaluation. In this method, the role of a measuring device is performed by human sensory organs (eyes, ears, organs of taste, sense of smell, touch).This article provides information on the application and significance of organoleptic methods in assessing the quality of products, the advantages and disadvantages of organoleptic analysis. The results and conclusions of organoleptic analyses conducted on product samples and the authors' suggestions are also presented.
